INGREDIENTS

Melt the butter and add the diced onions. Cook before adding the minced garlic. Then add the pumpkin puree, coconut milk, and broth. Bring the mixture up to a boil.

Add the rice and lower the heat. Cover with a lid for 17 minutes, stirring at the halfway point.

Remove the pot from the heat, keep the lid on the pot, and let the rice rest for 10 minutes. Fluff before serving.
