Hi my name is Carmy and I’m cold. Welcome back to my first Monday on the Run of 2018! We are off to a great start with -20 weather and because I signed up for a Strava challenge without realizing treadmill runs don’t count, here I am running in the cold ha. At least all the extra calories from the holidays (hello bubbletea daily and huge family dinners daily) have kept me warm hahaha. But seriously though, I feel like I’m running while 4 months pregnant because of the cute little food baby that I’m sporting.
This week I totalled out at 32K which wasn’t too bad. Because it was so cold, I’m pretty happy the distances weren’t too long. However, I kinda love running in the trails, especially in the winter, I’m running pretty slowly on the snow so I’m literally out there for what feels like FOREVER. Time spent running versus the distance itself has me being cold AF.
This Week’s Meal Prep Recipes
I thought I’d do something a little different this week for Monday on the Run and include my meal prep for the week since it’s the new year and I’ve gotten a couple messages re: meal prep recipe ideas. Down below I have what’s prepped for breakfast and lunch, which are usually my two grab and go meals plus snacks that I toss into bag. Breakfast: Overnight Oats

Lunch: Roast Beef Salad + Mixed Fruit
- Roast Beef Salad is a mix of a handful of spinach, roast beef strips, goat cheese, and topped off with balsamic vinegar.

Snacks: Harvest Snaps and a Kind Bar (before and after lunch because I like snacking)
