The frozen pizza might be delicious but this One Pot Cheese Tortellini with Butternut Squash and Spinach will literally take you the same amount of time to make.
One Pot Cheese Tortellini with Butternut Squash and Spinach
One of the reasons that I love Mann’s culinary cuts is because it helps you take out a ton of prep time. When I only have 30 minutes to make something nutritious, I can’t use 10 of those minutes peeling and cutting up butternut squash (or make it in a fun zig zag shape that kids seem to love)!
Another way this recipe speeds things up is by using only one pot – less items to clean up and less work to do! You really only need a pot, something to stir, and a measuring cup for the chicken stock. You can even just eyeball it and skip the measuring up altogether! That’s right, just a pot and a wooden spoon to wash! Win!

This One Pot Cheese Tortellini with Butternut Squash and Spinach is very versatile too.
- It’s a delicious cozy meal that can also be turned into a soup by adding additional stock.
- If you like your soup to be more thick, you can take the time to puree some of the butternut squash after it’s been sauteed and add it back to the pot.
- Mann’s also has cubed sweet potatoes that you can use instead of the butternut squash – or in addition to Mann’s Butternut Squash Zig Zags.
- You can swap out the spinach for other greens such as kale.
One Pot Cheese Tortellini with Butternut Squash and Spinach
Ingredients
- 1 tbsp olive oil
- 2 bags Mann’s Butternut Squash Zig Zags
- 5 cups chicken stock, more if you want it to be more soup-y
- 11 oz baby spinach
- 500 grams frozen cheese tortellini
- salt, pepper, garlic powder, to taste
Instructions
- Heat the oil in a large skillet or a dutch oven. Stir in Mann’s Butternut Squash Zig Zags, salt, pepper, and garlic powder.
- After the butternut squash has soften, add in the chicken stock
- Add in the baby spinach and then the frozen tortellini. Let it come up to a boil before lower it down to a simmer.
- Following the direction of the tortellini to ensure it's cooked through and it serve.
