Summer Couscous Chicken Mason Jar Salad
Looking for an easy salad to bring to work? This summer couscous chicken mason jar salad has your back! I love that everything in this jar doesn’t take a lot of effort to put together and is perfect for those hot days where you don’t want to eat anything too heavy and heated up.
I personally love mason jar salads because they’re easy to meal prep ahead of time since the layering keeps everything fresh and from getting soggy. Plus all you have to do afterwards is dump it all in a bowl and give it a good mix and your lunch is ready!
This layered chicken mason jar salad is also great if you have leftover chicken as all you’ll have to do is to roast up some sweet potatoes and cook some couscous and you’ve got yourself a whole new meal!
I love using my Instant Pot to make shredded chicken. It’s super easy and takes a couple of minutes. Plus, unlike the oven, it doesn’t make the kitchen heat up more than it already is in the summer time! Win!
This layered chicken mason jar salad is also great for picnics and potlucks. This mason jar salad can be made ahead of time. You don’t have to reheat this at picnics and you don’t have to figure out how to keep warm/reheat a dish for a potluck.
What You’ll Need To Make This Summer Couscous Chicken Mason Jar Salad
- cashew cream (or your dressing of choice)
- pumpkin seeds
- sunflower seeds
- shredded chicken
- roasted sweet potatoes
- couscous
- mixed greens
I used cashew cream for this recipe because I had a huge batch made – if you prefer a different dressing, my year-round favourite is this Roasted Garlic Dressing and for the summer time, this Lemon Basil Vinaigrette.
For my roasted sweet potatoes, here’s how I roast them in the oven. If you have another way you prefer to make your sweet potatoes, feel free to go with that!
How To Make This Couscous Chicken Mason Jar Salad
- Cook your chicken, sweet potatoes, and couscous in your method of choice. I cooked my chicken in the Instant Pot and sweet potatoes in the oven.
- In a 750mL mason jar, layer this order: dressing, nuts & seeds, chicken, roasted sweet potatoes, couscous, and mixed greens.
- Store for up to 4 days in the fridge.

Ingredients
- 6-8 tbsp cashew cream, or your dressing of choice
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- 2 cups shredded chicken
- 1 sweet potato, roasted
- 1 cup cooked couscous
- 2-3 cups mixed greens
Instructions
- Cook your chicken, sweet potatoes, and couscous in your method of choice. I cooked my chicken in the Instant Pot and sweet potatoes in the oven.
- In two 750mL mason jar, layer this order: dressing, nuts & seeds, chicken, roasted sweet potatoes, couscous, and mixed greens.
- Store for up to 4 days in the fridge.
