Craving some soup? Try this Instant Pot Broccolini Broccoli Cheddar Soup that takes under 15 minutes to make!

Ingredients

  • 2 tbsp olive oil
  • 1 onion chopped roughly
  • 4 garlic crushed
  • 1 tsp paprika
  • salt & pepper to taste
  • 2 small russet potatoes cut into cubes
  • 3 cups chicken stock
  • 1 large broccoli crown
  • 12 oz broccolini
  • 1 cup cheddar or more!

Instructions

  • In your Instant Pot on sautĂ© mode, add olive oil and then your onions and let it cook for a few minutes.
  • Once your onions have soften, add your garlic cloves and give it a good stir.
  • Next add your paprika, salt, and pepper before adding half the chicken stock into the pot to deglaze the bottom if needed.
  • Add your potatoes into the pot and the rest of your chicken stock before placing the broccoli and broccolini on top. Do not stir.
  • Place your lid on and make sure the knob is set to sealing and set your pot on Manual for 5 minutes.
  • Once the 5 minutes is up, let it natural pressure release for 5 more minutes before quick releasing the rest of the pressure.
  • With an immersion blender, puree the soup to your desired consistently (or transfer to a blender to blend).
  • Once smooth, stir in your cheddar and serve immediately.
