Instructions
Heat the oven to 400F
Coat the chicken thighs with 1-2 tbsp olive oil and cajun seasoning and place evenly on a sheet pan.
Coat the sweet potato cubes with 1 tbsp olive oil, salt, and garlic powder and place evenly on a separate sheet pan.
If choosing to roast your corn kernels, coat with 1/2 tbsp olive oil and a pinch of salt and place on a separate sheet pan as well.
Roast everything in the oven for 35-45 minutes.
Give the sweet potatoes and corn kernels a stir and pull it out at the 30 minute mark.
Once everything is done, let the chicken cool before serving or packing up in meal prep containers.
