In a bowl, whisk together your ingredients for the peanut sauce. Set aside in the fridge. Tip: if the peanut sauce is too thick, whisk in an extra tablespoon or two of water slowly, bit by bit.
Bring a pot of water to a boil and follow the manufacturer directions on the egg noodles.
Once the noodles are done, drain them and rinse in cold water.
In a large bowl, combine the noodles, sliced cabbage, carrots, chicken, and peanut sauce. Mix until combined.
Serve chilled or store for up to 4 days in an airtight container.
