In a bowl, mix together the flour, rolled oats, honey, brown sugar, cinnamon, and salt. The pour in the melted butter and stir until the dry ingredients become moist from the butter. Scoop out 1/2 cup and set it aside.
In a 9×9 baking dish, line with parchment paper, and press the oats mix into the dish.
In a bowl, combine the strawberries, lemon juice, vanilla extract, and flour. Layer the strawberry mix on top of the crust.
Sprinkle the rest of the oats mix on top of the strawberries.
Bake for 30-40 minutes. Let cool for 10 minutes before cutting.
To freeze: let cool completely before freezing them on a sheet pan. Once frozen, transfer the bars into a freezer friendly ziploc bag. This keeps them from freezing together in a lump!
