Quick and delicious, this healthy Ground Beef Stir Fry is packed with vegetables and makes for the perfect weeknight meal or meal prep. All you need are some pantry staples to make the sauce and a handful of vegetables and you’ll have yourself a fresh and hearty meal in no time.
Combine the beef broth, cornstarch, soy sauce, mirin, honey, sesame oil, and garlic and set aside.
In a large non-stick skillet or wok, heat up the (olive or vegetable) oil over medium-high heat.
Once hot, add the ground beef and saute, stirring occasionally to break up the beef into pieces, until mostly browned. Season with salt and pepper as you do this.
Add the vegetables to the pan and cook for 2 to 3 minutes.
Add the sauce to the pan and lower the heat to medium.
Continue to cook until the sauce has thickened to your liking. Top with green onions and sesame seeds if desired.
Serve with rice or side of your choice or transfer to meal prep containers.
