A whole meal made in one pot, this Parmesan Chicken and Mushroom Orzo is super easy to make and meal preps wonderfully. It's delicious and fast so you can make this on a weeknight and get dinner on the table in less than 40 minutes.
Add 1 tablespoon of olive oil to a pan over medium heat. Add in the chicken, seasoned with salt and pepper, and cook for 5 minutes or until the chicken has cooked through. Set aside.
Add in another tablespoon of olive oil and sauté the onions for 2 minutes before adding in the garlic and sautéing for 1 minute. Then add in the mushrooms and continue to cook for another 1 minute.
Add in orzo to the pan and stock. Cover and cook for 7 to 10 minutes or until the orzo is fully cooked and the liquid has been absorbed.
Stir in a handful of parmesan cheese and the cooked chicken until everything is fully combined.
