One Pot Beef Tomato Basil Spinach Pasta (and a side of Strawberry and Cashew Salad)
This one pot beef tomato basil spinach pasta is just what you need when you're busy and need a fast meal prep! Then throw together a side of strawberry and cashew salad the morning of and you've got yourself a delicious well balanced lunch on the go!
In your french oven/dutch oven/pot, brown your beef. Add salt and pepper to taste. Once it's cooked, remove from the pot and set it aside.
After removing the beef, add in your pasta, diced tomatoes, chicken stock, garlic, onion and basil before bringing it to a boil before covering it and letting it simmer for 10ish minutes, until the pasta is cooked through. Season with salt and pepper to taste.
Once everything is cooked, fold in your baby spinach, beef, and add some parmesan cheese on top.
Strawberry and Cashew Salad
For your salad, combine baby spinach, sliced strawberries, cashew, and chia seeds. Serve with dressing or keep it on the side.
Notes
Note: there is additional liquid from the canned tomatoes so if you find it too liquid-y, let it cook down a bit. The extra liquid should be making a bit of a tomato basil "sauce" and will help prevent the pasta from drying out when it is re-heated.
