Healthy Chicken and Vegetable Stir Fry with Peanut Sauce
Craving a delicious satay stir fry from your local take out place? Skip the take out and make your own healthy chicken and vegetable stir fry with peanut sauce. It takes less than 30 minutes and you can pack the leftovers as a work lunch!
In a small sauce pan, mix together your peanut butter, garlic, oyster sauce, tamari, chicken stock, and cornstarch. Let this simmer on low and stir occasionally.
Add the rest of your oil into the now empty pan and cook your chicken until it's cooked through - season with salt and pepper to taste.
Once the chicken is done cooking, combine the vegetables back into the pan and pour in your peanut sauce. Cook for another minute or so until everything has been coated with the sauce.
