Taco Stuffed Avocados
Tacos… but with an avocado. It’s hard to go wrong with this switcharoo! Load up the halved avocados with the easiest taco meat and toppings of your choice for an easy dinner in under 30 minutes!

taco seasoning

diced (or cherry tomatoes)
Instructions
Add oil to a skillet on medium-high heat before adding in the ground beef. Cook for 5-8 minutes, breaking up the beef with a spatula as you go.
Once cooked through, add in the taco seasoning alongside 1/4 cup of water. Saute until the liquid as been absorbed. Set aside when done.
Halve the avocados, remove the pit, and using a spoon, scoop out some of the avocado.
Squeeze on the lime juice, sprinkle some salt on, and then stuff the avocado shells with the taco meat mixed with some diced onions and tomatoes.
Dice up the scooped out avocado and serve it on the side with the rest of the onions and tomatoes, with some lime and salt.
