fettuccine pasta
or pasta of choice
1-2
tbsp
olive oil
1
onion
sliced
3
cloves
garlic
minced

cups
spinach
1
tsp
salt
1
cup
hummus
2
cups
shredded chicken
1
lemon
juiced and zested
1
handful
basil
red pepper flakes + parmesan for topping
Instructions
Cook your pasta according to the directions on the packaging, reserving some pasta water.
In a pot or pan on medium heat, add olive oil and saute onion until soften and add in the mince garlic and saute for a minute.
Add in spinach and salt and saute until wilted.
Deglaze the pot with the lemon juice and zest.
Add in the hummus and ½ cup pasta water, mix until the sauce is smooth. Add more pasta water if you want a less thick sauce.
Add in the cooked pasta and shredded chicken and toss to coat.
Add in a handful of basil and stir until it’s mixed in.
Top with some red pepper flakes and parmesan.
