In a frying pan, add in your bacon over medium heat and cook until the bacon is done. Flipping at least once. Around 4-7 minutes, depending on your bacon, pan, and how crispy you like it.
Once done, remove the bacon and place it on some paper towels to absorb the extra oil.
Do not drain the oil from the pan. Add in the diced sweet potatoes and onions. Season with salt and pepper and sauté over medium heat until cooked through. Approximately 15 to 20 minutes.
