This easy homemade roasted garlic butter, also known as garlic compound butter, combines mouthwatering roasted garlic, creamy butter, and fresh chives to create a delicious condiment. Remove the paper-thin skin of the garlic. Trim the top ¼ inch off the top of the garlic bulb. Place the heads of garlic onto a piece of tin foil and drizzle with olive oil and a pinch of salt.
Tightly wrap the garlic in the foil. Roast in the oven for 40 to 60 minutes (or air fry for 20 to 25 minutes instead.) When cool to the touch, remove the garlic cloves from the skin by squeezing the cloves out or simply peeling the skin off.
Add the butter, roasted garlic, salt, and chives to a small bowl.
Mix until well combined. Store in the fridge in an airtight container or rolled in a log wrapped in plastic until ready to use.
