These veggie-packed firecracker ground chicken lettuce wraps are a quick and easy weeknight dinner that you’ll want to make on repeat. Perfect for meal prepping as well, these firecracker lettuce wraps are loaded with sweet and spicy flavor!
In a small bowl, combine the sriracha, brown sugar, soy sauce, red chili flakes, salt, and a tablespoon of water. Mix until well combined and set aside.
Heat the oil in a large skillet over medium heat and add the diced onions. Saute for 2 minutes. Add the minced garlic and salt and saute for another minute.
Push the onions and garlic to the side of the skillet, add the ground chicken to the center of the skillet, and cook for 6 to 7 minutes. Make sure to break up the pieces until fully cooked through.
Add the coleslaw, carrots, edamame, and sauce to the skillet. Mix well to combine and allow everything to cook for around 5 minutes or until the frozen edamame has cooked through and the vegetables have softened to your liking.
Assemble your lettuce cups by adding the firecracker chicken to the lettuce and garnish with green onions, roasted sesame seeds, and microgreens.
