Ingredients
8cupskalewashed, stems removed, and cut into bite-sized pieces
In a large bowl, soak sliced apples for 5 minutes in enough salted water to cover them. Use ½ teaspoon of salt per cup of water. Drain, rinse, and set aside.
Add the olive oil, maple syrup, Dijon mustard, apple cider vinegar, lemon juice, lemon zest, salt, and pepper to a small bowl. Mix until the salad dressing is well combined.
Add a couple of tablespoons of the salad dressing to the kale in a large bowl and massage with clean hands for at least a minute.
Add the apples, carrots, shallots, and the rest of the salad dressing to the kale. Toss to combine and enjoy!
