Instructions
Peanut Sauce
In a sauce pan, mix together 3 tbsp of peanut butter, 2 tbsp soy sauce, a bit more than half a cup of water, 1/8 tsp ginger, and a bit of garlic. Mix it until it’s well combined. Note: the more water you add, the less thick the sauce is. Adjust to your preference
Spiralized Carrots, Broccoli, and Chicken with Peanut Sauce
In a pan, "stir fry" your broccoli and shredded chicken with as much or as little peanut sauce you'd like until the broccoli has softened. Serve on top of a bed of spiralized carrots
Optional: Add some crushed peanuts on top for a little bit of garnish.

In a bowl, combine your leftover rotisserie chicken, spiralized carrots, mixed greens, cooked lentils, grapes, and some mixed nuts! You can eat it as is or drizzle some of the peanut sauce/salad dressing of your choice on top.
