This easy Herb Chicken with Broccolini Meal Prep is an easy dish to throw together quickly on a busy weekend so you don’t spend all day meal prepping for the week!
Place your potatoes, garlic, and chicken thighs in a pan and then pour in melted butter that’s been mixed with herbs. Make sure everything is coated before placing it in the oven for 45 minutes.
While the chicken is cooking, put your Mann's Broccolini® on a sheet pan before drizzling on olive oil, garlic powder, and pepper flakes. Give them a mix to make sure everything is coated evenly and at the 20 minute mark, place them in the oven with your chicken, letting them roast for 25 minutes.
Once done, pull everything out of the oven. While the chicken is resting, grate some parmesan on top of the broccolini and give it a touch of lemon juice on top. Give it a toss and serve with your chicken and potato once ready.
