This Herb Chicken with Broccolini Meal Prep is an easy dish to throw together quickly on a busy weekend so you don’t spend all day meal prepping!

Herb Chicken with Broccolini Meal Prep
Have you ever had days where you craved a good old fashioned roasted chicken and potatoes? It’s been quite cold these last few days so I thought it was just perfect for a simple but classic comforting herb chicken. Usually I experiment on my chicken but with a simple chicken dish, it gives me the opportunity to experiment with my side of vegetables instead. Time for the vegetables to shine!
Today, I’m sharing with you how I’ve been enjoying making my broccolini. Broccolini, for those who aren’t familiar with it, is a vegetable that is a hybrid of broccoli and kale, with small florets on slender stalks. It kind of looks like a stretched out broccoli but has a more sweet, earthy taste to it. I get mine from Mann’s Fresh Vegetables as they always come perfect and ready to be eaten!
What You’ll Need To Make This Herb Chicken Broccolini Recipe
- potatoes
- garlic
- chicken thighs
- butter
- herbs (basil, thyme, oregano)
- Mann’s Broccolini®
- oil
- red pepper flakes
- garlic powder
- parmesan
- lemon
How To Make Herb Chicken with Broccolini
- Heat your oven to 425F.
- Place your potatoes, garlic, and chicken thighs in a pan and then pour in melted butter that’s been mixed with herbs. Make sure everything is coated before placing it in the oven for 45 minutes. (I added an extra brush of butter on top of the chicken skin just to make sure it’s super crispy but that’s optional).
- While the chicken is cooking, put your Mann’s Broccolini® on a sheet pan before drizzling on olive oil, garlic powder, and pepper flakes. Give them a mix to make sure everything is coated evenly and at the 20 minute mark, place them in the oven with your chicken, letting them roast for 25 minutes.
- Once done, pull everything out of the oven. While the chicken is resting, grate some parmesan on top of the broccolini and give it a touch of lemon juice on top. Give it a toss and serve with your chicken and potato once ready.
Tips and Variations On Making This Meal Prep:
- The chicken and potatoes can be made in the slow cooker if you want to prep this the night before or morning of. As the broccolini only takes 25 minutes in the oven, you can pop that in 30 minutes before your slow cooker is done cooking so they can be served together! Put everything for the chicken and potatoes into the slow cooker and set it to low for 7-8 hours or high for 4-5 hours.
- If you’re a fan of garlic, slice off the top 1/2 inch off a head of garlic, drizzle some olive top on top, and then nest the bulb onto the corner of the pan of chicken. You’ll have a wonderful roasted head of garlic when you’re done!
- This meal prep sound keep up to 4 days in the fridge in an airtight container. I’ve not tested freezing this.
- Not a fan of potatoes? Swap them out with sweet potatoes or another root vegetable.

I buy broccolini frequently and didn’t know that it was related to kale. I think your meal looks wonderful and prepping ahead of time is such a life saver for week night meals!
