To a food processor or blender, add the cottage cheese, eggs, parmesan, garlic powder, onion powder, and Italian seasoning. Blend until smooth.
Divide the batter between two parchment-lined eighth sheet pans. Use the back of a spoon to spread the batter to the edges of the sheet pans if you're like a more uniform looking flatbread.
Bake for 35 to 40 minutes or until the tops of the flatbread are golden brown.
