An easy alternative to bread, this homemade cottage cheese flatbread comes together in a few easy steps.

Ingredients You’ll Need

cottage cheese — cottage cheese is a low-calorie cheese with a mild flavor. It’s soft, white, and creamy, and it comes in different milk fat levels and curd sizes. I’m using 4% MF (4% milk fat) and usually just pick whichever container is on sale (from 4% to 2% to lactose-free!)! I’d personally skip the low-fat version.
eggs — this helps bind everything together and will give the flatbread some structure once baked.
parmesan — I love the salty, nutty flavor that parmesan adds. Plus, when melted, it gives the flatbread a nice, crisp texture.
seasoning — feel free to use your favorite seasoning combination. I’m using garlic powder, onion powder, and Italian seasoning.
How to Make Cottage Cheese Flatbread

- Heat the oven to 350F.
- To a food processor or blender, add the cottage cheese, eggs, parmesan, garlic powder, onion powder, and Italian seasoning. Blend until smooth.

- Divide the batter between two parchment-lined eighth sheet pans.
- Bake for 35 to 40 minutes or until the tops of the flatbread are golden brown.
- If using as a wrap, use immediately when warm to avoid the flatbread from tearing.

Recipe Tips and Notes
- I find that if the flatbreads are much more flexible when still warm from the oven. If I want to roll it like a wrap, I very quickly add my toppings and roll them immediately out of the oven. When using it like sandwich bread, I can use the flatbread cool or straight from the fridge.
- Some other seasonings you might like to try are red pepper flakes, dried basil, dried oregano, dried thyme, dried rosemary, ranch seasoning, everything bagel seasoning, and more!

Make Ahead Tips
- Make Ahead: once cooled, store in an airtight container for up to 4 days in the fridge.
- Reheat: no need to reheat it! I use this cottage cheese flatbread straight from the fridge.
Serving Ideas
I like to use it like sandwich bread so the fillings are pretty similar to my pesto chicken sandwich and pesto turkey sandwich. But here are some more ideas of what to add to your flatbread!

Ingredients
- 1 cup cottage cheese
- 2 eggs
- 5 tablespoons parmesan, grated
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
Equipment
- 2 eighth sheet pans lined with parchment paper
Instructions
- Heat the oven to 350F.
- To a food processor or blender, add the cottage cheese, eggs, parmesan, garlic powder, onion powder, and Italian seasoning. Blend until smooth.
- Divide the batter between two parchment-lined eighth sheet pans. Use the back of a spoon to spread the batter to the edges of the sheet pans if you're like a more uniform looking flatbread.
