Ingredients
One Pot Beef Tomato Basil Spinach Pasta
- ~1 lb lean ground beef
- 3 cups pasta
- 3-4 cups chicken stock
- 28 fl oz diced tomato
- 5 cloves garlic sliced
- 1 onion sliced
- handful basil
- 5 oz baby spinach
- salt and pepper to taste
- parmesan cheese
Strawberry and Cashew Salad
- baby spinach
- strawberry sliced
- 1 tbsp chia seeds
- 1 tbsp poppy seed salad dressing
Instructions
One Pot Beef Tomato Basil Spinach Pasta
- In your french oven/dutch oven/pot, brown your beef. Add salt and pepper to taste. Once it's cooked, remove from the pot and set it aside.
- After removing the beef, add in your pasta, diced tomatoes, chicken stock, garlic, onion and basil before bringing it to a boil before covering it and letting it simmer for 10ish minutes, until the pasta is cooked through. Season with salt and pepper to taste.
- Once everything is cooked, fold in your baby spinach, beef, and add some parmesan cheese on top.
Strawberry and Cashew Salad
- For your salad, combine baby spinach, sliced strawberries, cashew, and chia seeds. Serve with dressing or keep it on the side.
Notes
Note: there is additional liquid from the canned tomatoes so if you find it too liquid-y, let it cook down a bit. The extra liquid should be making a bit of a tomato basil "sauce" and will help prevent the pasta from drying out when it is re-heated.
