This one pot beef tomato basil spinach pasta is just what you need when you’re busy and need a fast meal prep! Then throw together a side of strawberry and cashew salad the morning of and you’ve got yourself a delicious well balanced lunch on the go!
One Pot Beef Tomato Basil Spinach Pasta
You know I’m all about one pot pasta dishes because I hate washing dishes. One pot meals make dinner time super easy as once you have all your ingredients prepped and ready, it takes little to no effort to cook!
While this one pot beef tomato basil spinach pasta recipe works for meal prep or a speedy dinner, it also works great for pot lucks! You can easily double the recipe. It’s easy to modify to make it vegetarian friendly or even change up the protein each time so it looks like you’re the pot luck champ despite using the same base recipe.
What You’ll Need To Make This Easy One Pot Pasta
- lean ground beef
- pasta
- chicken stock
- diced tomato
- garlic cloves
- onion
- basil
- baby spinach
- salt and pepper to taste
- parmesan cheese
For the Strawberry and Cashew Salad
- baby spinach
- strawberry
- chia seeds
- poppy seed salad dressing
How To Make This One Pot Beef Pasta
In your french oven/dutch oven/pot, brown your beef. Add salt and pepper to taste. Once it’s cooked, remove from the pot and set it aside.
After removing the beef, add in your pasta, diced tomatoes, chicken stock, garlic, onion and basil before bringing it to a boil before covering it and letting it simmer for 10ish minutes, until the pasta is cooked through. Season with salt and pepper to taste.
Once everything is cooked, fold in your baby spinach, beef, and add some parmesan cheese on top.
Substitutions
- Swapping out the beef and chicken stock for more veggies, tofu, and vegetable sock to make it vegetarian friendly
- Adding shrimp and other seafood near the end to make it a seafood pasta
- Switch up the greens and add kale, broccoli, zucchini, and etc
- Add some meatballs in instead of ground beef (hello frozen Costco meatballs for a fast meal prep!)
To add a little bit of variety to my meal prep, the morning of, I tossed together a quick salad! In 5 minutes, I tossed together a couple of sliced strawberries, cashews, baby spinach, and chia seeds into a bento box to go with the one pot beef tomato basil spinach pasta. Easy, fast, and delicious!
For this one pot beef tomato basil spinach pasta, I used a french oven from Staub to make the one pot pasta and monbento lunch container to store (they stack so the Strawberry and Cashew Salad doesn’t require an extra container to bring to work).

Ingredients

- ~1 lb lean ground beef
- 3 cups pasta
- 3-4 cups chicken stock
- 28 fl oz diced tomato
- 5 cloves garlic, sliced
- 1 onion, sliced
- handful basil
- 5 oz baby spinach
- salt and pepper to taste
- parmesan cheese
Strawberry and Cashew Salad
- baby spinach
- strawberry, sliced
- 1 tbsp chia seeds
- 1 tbsp poppy seed salad dressing
