olive oil

onion
chopped roughly

garlic

paprika
salt & pepper

russet potatoes
cut into cubes

chicken stock

broccoli crown

broccolini

cheddar
or more!
Instructions
In your
Instant Pot
on sauté mode, add olive oil and then your onions and let it cook for a few minutes.
Once your onions have soften, add your garlic cloves and give it a good stir.
Next add your paprika, salt, and pepper before adding half the chicken stock into the pot to deglaze the bottom if needed.
Add your potatoes into the pot and the rest of your chicken stock before placing the broccoli and broccolini on top. Do not stir.
Place your lid on and make sure the knob is set to sealing and set your pot on Manual for 5 minutes.
Once the 5 minutes is up, let it natural pressure release for 5 more minutes before quick releasing the rest of the pressure.
With an
immersion blender
, puree the soup to your desired consistently (or transfer to a blender to blend).
Once smooth, stir in your cheddar and serve immediately.
