Instant Pot Broccolini Broccoli Cheddar Soup
Who doesn’t love broccoli cheddar soup on a cold day? I know you’re probably thinking – why broccolini and broccoli? Well, this recipe came to be while I was snowed in and this was what I had in my fridge! After combining the two and the soup coming out delicious, I decided to make it a few more times and well, the results were the same. Delicious creamy goodness. So here I am sharing it with you! *if you only have broccoli or only broccolini, I’m more than positive that you can substitute it in the recipe ;)
What You’ll Need For This Broccolini Broccoli Cheddar Soup
Equipment:
- an Instant Pot (mine is a 6qt)
- a handheld blender (or a regular blender)
Ingredients:
- olive oil
- onion
- garlic
- paprika
- salt & pepper
- potato
- chicken stock
- broccoli
- broccolini
- cheddar
How To Make This Broccolini Broccoli Cheddar Soup in the Instant Pot
- In your Instant Pot on sauté mode, add olive oil and then your onions and let it cook for a few minutes.
- Once your onions have soften, add your garlic cloves and give it a good stir.
- Next add your paprika, salt, and pepper before adding half the chicken stock into the pot to deglaze the bottom if needed.
- Add your potatoes into the pot and the rest of your chicken stock before placing the broccoli and broccolini on top. Do not stir.
- Place your lid on and make sure the knob is set to sealing and set your pot on Manual for 5 minutes.
- Once the 5 minutes is up, let it natural pressure release for 5 more minutes before quick releasing the rest of the pressure.
- With an immersion blender, puree the soup to your desired consistently (or transfer to a blender to blend).
- Once smooth, stir in your cheddar and serve immediately.
Can You Freeze This Soup?
- To be honest with you, I have not tried freezing this soup. From my understanding, due to the potato used in the recipe I don’t think the soup will freeze well (the potato is used to thicken the soup without use of cornstarch and because I like potato lol). If I attempt this, I’ll come back and share my results!
Can This Be Made in the Slow Cooker or Stove Top?
- Yes! However, it won’t take 10 minutes to cook.
Can You Sub The…?
- You can sub the broccoli for broccolini or broccolini for broccoli. I just decided to use both!
- If you want more cheese or a different type of cheese on top of it, I like parmesan and/or monterey jack and/or jalapeno cheddar
- If you don’t want to use chicken stock, vegetable stock works as well

- 4 garlic, crushed
- 1 tsp paprika
- salt & pepper, to taste
- 2 small russet potatoes, cut into cubes
- 3 cups chicken stock
- 1 large broccoli crown
- 12 oz broccolini
- 1 cup cheddar, or more!
