    Fast Dinner Tonight

You’re stopping by the grocery store after work because you’re in a pickle… you don’t have anything prep and you need to get dinner ready fast because you need to chauffeur someone to hockey practice and someone else to a tutoring session. Your eyes lock onto the frozen pizza section and you start making your way towards it. STOP.

One Pot Cheese Tortellini with Butternut Squash and Spinach

What if I told you that in less than 30 minutes, you can make your family a nutritious meal. All you need are a few simple items from the grocery store and while it’s not from scratch, it’s just as delicious and packed with nutrients! Plus, there’s no prep time needed! The frozen pizza might be delicious but this One Pot Cheese Tortellini with Butternut Squash and Spinach will literally take you the same amount of time to make.

This One Pot Cheese Tortellini with Butternut Squash and Spinach will be one of the fastest dinners you'll make! It's delicious, easy, and takes under 30 minutes to make.

One Pot Cheese Tortellini with Butternut Squash and Spinach

One of the reasons that I love Mann’s culinary cuts is because it helps you take out a ton of prep time. When I only have 30 minutes to make something nutritious, I can’t use 10 of those minutes peeling and cutting up butternut squash (or make it in a fun zig zag shape that kids seem to love)!

Another way this recipe speeds things up is by using only one pot – less items to clean up and less work to do! You really only need a pot, something to stir, and a measuring cup for the chicken stock. You can even just eyeball it and skip the measuring up altogether! That’s right, just a pot and a wooden spoon to wash! Win!

So to recap, for this One Pot Cheese Tortellini with Butternut Squash and Spinach, you need to get

    • two bags of Mann’s Butternut Squash Zig Zags
    • 1 box of chicken stock
    • 1 bag of fresh cheese tortellini
    • 1 box of spinach

and then you’ll just need pantry staples of olive oil, salt, pepper, and garlic powder. It really is that simple. So step away from the frozen pizza aisle and let’s get cooking!

Other Ways To Eat This One Pot Cheese Tortellini with Butternut Squash and Spinach

This One Pot Cheese Tortellini with Butternut Squash and Spinach is very versatile too.

    • It’s a delicious cozy meal that can also be turned into a soup by adding additional stock.
    • If you like your soup to be more thick, you can take the time to puree some of the butternut squash after it’s been sauteed and add it back to the pot.
    • Mann’s also has cubed sweet potatoes that you can use instead of the butternut squash – or in addition to Mann’s Butternut Squash Zig Zags.
    • You can swap out the spinach for other greens such as kale.

I love that this has some veggies in the form of spinach. And the fact that it’s a one pot meal makes clean up easy.
