Honestly, I had some trouble thinking up what to title this Flourless Healthy Chickpea Peanut Butter Blondies recipe. On one hand, it is kinda like a brownie but the texture is also kind of like eating fudge. A coworker and I were discussing it because at first bite it takes your brain a second to be like wait is this a brownie? Regardless, these healthy chickpea peanut butter blondies had disappeared off the plate I set out at work. I was told some had 3! So when you make them, make sure to grab a square of these yummy chickpea blondies before they disappear!

I feel the need to apologize for this photo because I took it at like 10PM after they were done and before I popped it into the fridge soooooo the colour is a little off. I promise they taste good though ;)
Most of these ingredients, you could probably find in your pantry. I was actually inspired to make these Flourless Healthy Chickpea Peanut Butter Blondies because I was staring at my own pantry trying to figure out what I want to make dessert wise for my meal prep. So here’s what’s in them!

- peanut butter
- salt
- vanilla extract
- baking powder
- honey
- chocolate chips
How To Make Flourless Healthy Chickpea Peanut Butter Blondies
These chickpea blondies are seriously so easy to make – you put everything but the chocolate chips into your food processor (I own a Cuisinart food processor) and blend it until it’s smooth. Then pop it into the oven (I used my Cuisinart Combo oven because it fit my 9×9 OXO pan perfectly!) and boom it’s done. I then cut them into squares and put them into an airtight container and stored it in my fridge until the morning when I took it to work to share!
Tips On Perfecting These Flourless Healthy Chickpea Peanut Butter Blondies
- I line my 9×9 pan with parchment paper – to keep it all in place, I use two, one going around horizontally and one vertically. Then to keep it in place, I clip it with an alligator clip so it stays put when I put in the mixture. I remove them before I bake the blondies though ;) It’s also easier to lift out to cut afterwards vs greasing the pan
- Make it taste more chocolate-y by throwing some chocolate chips in the mixture and fold it in before pouring it in the pan instead of just topping the mixture
Flourless Healthy Chickpea Peanut Butter Blondies
Ingredients
- 1 can (15oz) chickpeas, rinsed and drained
- 1/2 cup peanut butter
- 4 tbsp honey
- 1 tbsp vanilla extract
- 1 tsp baking powder
- chocolate chips, topping
Instructions
- Heat oven to 350 degrees.
- In a food processor, blend everything but your chocolate chips together.
- Spread your mixture into a 9x9 pan (lined or greased), sprinkle some chocolate chips on top (as much or as little as you'd like) and bake for 15 minutes.
- Once cooled, cut up the blondies. Serve as is or chill overnight and serve.
