This meal prep pasta salad is perfect chilled for warm days or when you are heading somewhere without a microwave!

Picture this: you wake up early because you have the fun task of waiting for the repair man who gives you the general “I’ll be there between 9-5!” line because something went wrong the night before. Since it’s last minute, you hadn’t gone to the grocery store but need to get your meal prep done that day.
Luckily for me, I had a bag of Mann’s Power Blend that consist of brussels sprouts, napa cabbage, kohlrabi, broccoli, carrots and kale so I felt like I had a pretty solid base to build my meal prep with as has all the veggies I’d need! Mann’s Power Blend also comes pre-shredded and washed for you means prep time gets cut down!
I needed something that I could eat without re-heating because I was working off-site in the next shift or two where I wouldn’t have access to a microwave. So I racked my brain on what to make. After a few ideas, I picked on a delicious meal prep pasta salad with one of my favourite dressing.
This meal prep pasta salad is pretty much made out of pantry staples so you have no excuse to say you couldn’t put together a meal prep when you haven’t gone shopping like myself!
I’m all about easy meal preps so this pasta salad is so easy to put together! Cook your split peas and half way through, pour in the pasta to cook alongside the peas. Whisking together the dressing is pretty much the last bit of “cooking” you need to do! Then combine the peas, pasta, power blend, and dressing! You can eat it right away for serve it the next day after it’s been chilled!

Meal Prep Pasta Salad ft Power Blend
Ingredients
- 1 cup Split peas
- 2.5 cups Pasta
- 1 bag Power Blend
Dressing
- 1 Lemon
- 2 tbsp Olive oil
- 2 tbsp Parmesan
- 2.5 tbsp Honey Mustard
- 1 splash Worcestershire sauce
Instructions
- Start by bringing a pot of water to a boil and add in your split peas. The split peas should take around 25 minutes to cook throughly. The pasta I used takes 9 minutes to cook so 16 minutes in, I added the pasta to the water.
- While the pasta and split peas are cooking on the stove, in a small bowl, mix the honey mustard, Worcestershire sauce, olive oil, parmesan, and lemon juice together. The lemon is to taste so taste as you go!
- Once the pasta and splits are done, drain the water, and toss on the dressing. Serve immediately or chilled.
