This one pot orzo chicken has been a favourite recipe for years now. It’s so easy to make as all you do is cook your chicken in a pan, sauté the mushrooms, add in the orzo, and boom, you’ve got dinner.

- olive oil
- onion — diced
- garlic — minced
- chicken breasts — boneless skinless breasts, diced
- mushrooms — cermini mushrooms or simply swap for 2 large portobello mushrooms
- salt + pepper — to taste
- chicken stock — I like to use Better than Bouillon
- orzo — also known as risoni, orzo is a short-cut pasta, shaped like a large grain of rice
- Parmesan cheese
How to Make This One Pot Orzo and Chicken
- Add olive oil to a pan over medium heat. Add in the chicken, seasoned with salt and pepper, and cook for 5 minutes or until the chicken has cooked through. Set aside.
- Add in another tablespoon of olive oil and sauté the onions for 2 minutes before adding the mushrooms and sautéing for 2 minutes. Then add in the minced garlic and continue to cook for another 1 minute.
- Add in orzo to the pan and stock. Cover and cook for 7 to 10 minutes or until the orzo is fully cooked and the liquid has been absorbed.
- Stir in a handful of parmesan cheese and the cooked chicken until everything is fully combined. Season with more salt and pepper if desired.
Frequently Asked Questions
Store the orzo chicken in an airtight container in the fridge. When properly stored, it can last for up to 4 days in the fridge.
I would not freeze this as the mushrooms won’t thaw right.
Feel free to stir in some frozen vegetables at the end such as peas, corn, or a mixed medley for extra veggies. You can also add some broccoli, cauliflower, and asparagus.

One Pot Parmesan Chicken and Mushroom Orzo
Ingredients
- 2 tbsp olive oil, divided
- 3 chicken breasts, diced
- Salt + Pepper, to taste
- 1 onion, diced
- 5 mushrooms, sliced
- 4 cloves garlic, minced
- 4 cups chicken stock
- 2 cups orzo
- handful parmesan cheese, approximately 1 cup
