Made in the Philips SoupMaker, this Thai Potato Leek Soup is super easy to make! All you have to do is add your ingredients, and in the press of a button, you’ll have yourself some delicious soup!

Thai Potato Leek Soup
Not too long ago, I attended the Toronto Soup Festival (thank you Philips for providing my friend and I the tickets! Disclaimer, I paid for all the soup I consumed!) and got to meet Chef Matt Basile (who I greeted with “Oh hey! You’re the Netflix guy!” I know, professional of me).
Anyways, he had this delicious Thai potato leek soup that I was in love with, so I thought why not try making my own! While I’m sure his is much more complex, mine is super simple and there’s pretty much no way to screw it up.
What is the Philips SoupMaker?
Philips was the main sponsor of the Toronto Soup Festival and showed us how to use the SoupMaker to make delicious soups! So what is the SoupMaker? It’s a little (but strong) machine that can make hot and cold soups and smoothies! There are 6 pre-set programs (purée, chunky, cold, compote, smoothies, and thanks to the optimized heating profile, milked-based soup), and you don’t have to stir and monitor during the cooking process!
Pretty much all you have to do is fill your ingredients up to the min/max line inside the SoupMaker, put the lid on, and pick one of the preset programs. And 18 minutes later, you’ve got soup! I love that once you turn it on, you can just leave it alone and it’ll take care of everything. Without the use of a soupmaker, you can put everything on the stove top to cook. However, in order to have a smooth creamy soup, you need to use an immersion blender. With the Philips SoupMaker, you can skip that step entirely as it cooks and blends the soup
What you’ll need to make this Thai Potato Leek Soup
Because there’s a min/max line in the SoupMaker, if you modify the amount of ingredients, be sure the ingredients don’t go over the max line.
- 1 leek
- 1 potato
- 2 white pearl onions
- 5 cloves of garlic
- thai green curry paste
- 2.5 cups of chicken broth/stock
- pinch of salt
- 1 can of coconut milk (added afterwards)
- optional toppings: croutons and basil
Bonus: minus the optional croutons, this Thai Potato Leek Soup is Whole30 compliant! Just double check that your curry paste is made from natural ingredients.
How to make this Thai Potato Leek Soup in the Philips SoupMaker
- Dice up your leek in approximately 2 inch cubes (should be 2 cups worth), potato (peeled), pearl onions, and garlic cloves.
- Add the chopped ingredients into the SoupMaker, making sure it is between the min/max line, add the chicken stock and green curry paste. Give everything a stir.
- Put the lid onto the SoupMaker and select the creamy soup option (first one) and let it run its course.
- Once it’s done, add the coconut milk into the soup and stir. Top with basil and croutons if you desire. The SoupMaker will heat up and sweat a little, don’t be alarmed! It’s just working its magic to cook up the ingredients!

Ingredients
- 2 cups leek
- 1 russet potato
- 2 white pearl onions
- 5 cloves of garlic
- 3 tbsp thai green curry paste
- 2.5 cups of chicken broth/stock
- pinch of salt
- 1 can coconut milk, (500 grams)
- optional toppings: croutons and basil
Instructions
- Dice up your leek in approximately 2 inch cubes (should be 2 cups worth), potato (peeled), pearl onions, and garlic cloves.
- Add the chopped ingredients into the SoupMaker, making sure it is between the min/max line, add the chicken stock and green curry paste. Give everything a stir.
- Put the lid onto the SoupMaker and select the creamy soup option (first one) and let it run its course.
- Once it’s done, add the coconut milk into the soup and stir. Top with basil and croutons if you desire.

Not going to lie, I had no idea a Soup Maker was a thing. But it can clearly do some wonderful things – and I can imagine how wonderful it would be to have when you’re cooking on the go, or in limited space. I mean, you could make soup in your office at work. That’s pretty awesome. Oh my gosh! I saw the Philips Soupmaker in the Williams-Sonoma catalog and have been wanting to see it in action! I love that it both cooks and blends the soup effortlessly without having to babysit a pot on the stove. Your Potato Leek Soup looks like it has the perfect velvety consistency. A lot of times, when I come home on a cold night, I’m just craving soup, but I’m so tired and don’t want to start pulling out the big pots and pans. This is so convenient.
