    These crispy air fryer fingerling potatoes are so easy to make with a handful of ingredients. With fluffy interiors and crispy, flavorful skins, these lemony parmesan fingerling potatoes make for the perfect side dish that the entire family will love.

    I could eat these crispy parmesan air fryer fingerling potatoes all day. Their delightfully crispy exteriors and soft, pillowy interiors make for the perfect bite.

    Why You’ll Love This Recipe

    • I love how you don’t need anything special to jazz up these fingerling potatoes. Most of the ingredients are kitchen staples and when combined, make these potatoes so flavorful.
    • It’s easy to make! Simply toss everything together and put it in the air fryer.
    • I love how crispy the fingerling potatoes come out! They are also so tender on the inside.
    • I love how by making these fingerling potatoes in the air fryer, it frees up oven space! Oven space is definitely a premium when making dinner!

    Ingredients You’ll Need

    Ingredients needed to make air fryer fingerling potatoes.
    • fingerling potatoes — fingerling potatoes are miniature long potato features (which wikipedia describes are stubby and finger-like lol) with thin skin and a low starch content. Once air fried, the interiors are soft and buttery with a very pleasant flavor. They come in all kinds of colors but I purchased a bag of golden fingerling potatoes.
    • olive oil — I use olive oil but you can use any type of cooking oil to coat the fingerling potatoes with.
    • lemon — I love the tangy, lemony flavor of adding half a lemon to the potatoes. It adds such a bright, fresh flavor. If you’re not a huge fan of lemon, I recommend reducing it by half. They almost taste like Greek potatoes with the lemon juice! I highly recommend using freshly squeezed lemon juice and not lemon juice from a bottle as it might taste a little bitter.
    • seasoning — I use the winning combination of garlic powder, onion powder, paprika, salt, and pepper. Feel free to play around with your favorite seasoning combo.
    • thyme — I like using fresh thyme but you can use your favorite herb.
    • parmesan — parmesan makes everything 10x better. The parmesan adds a lovely sharp flavor and it crisps up delightfully in the air fryer on the potatoes.

    I love my air fryer! This is the one I'm currently using and it crisps everything up perfectly with little-to-no oil.

    How to Make Air Fryer Fingerling Potatoes

    • In a bowl, add the fingerling potatoes, garlic powder, onion powder, paprika, salt, pepper, thyme, and parmesan. Toss well to combine.

    • Place a liner in the air fryer basket and transfer the fingerling potatoes into the air fryer in a single layer. Add any leftover sprigs of thyme on top of the potatoes if desired.
    • Air fry at 400F for 17 to 23 minutes, or until they’ve reached your desired level of crispiness. Make sure to shake the basket (or flip the potatoes with tongs) at the halfway mark.
    • Serve immediately with additional parmesan if desired.

    Recipe Tips and Notes

    • I always wash and pat dry the fingerling potatoes before I cut them.
    • I use parchment as the lemon juice would drip to the bottom of the air fryer basket instead of staying with the potatoes. It also keeps the parmesan cheese from melting to the bottom of the basket.
    • Air fry in batches if needed, especially if you have a smaller air fryer. Alternatively, remove the potatoes that are done cooking and continue to air fry any that need a little longer.
    • It’s important to shake the air fryer basket for this fingerling potato recipe as the parchment paper blocks the air flow, so the hot air won’t reach the underside of the potatoes.
    • If you have flaky sea salt, you can finish the fingerling potatoes with a pinch or two.
    • Use less lemon if you’re not a fan of a strong tangy, lemon flavor.

    Make Ahead Tips

    • Meal prep: once cooled, store the crispy parmesan air fryer fingerling potatoes in an airtight container for up to 4 days in the fridge.
    • Reheat: I like to reheat the fingerling potatoes in the air fryer for 5 to 7 minutes at 350F.
    • Freezer: I do not recommend freezing air fried fingerling potatoes.

    These crispy air fried fingerling potatoes are the perfect side dish for any meal, whether it’s for a weeknight dinner or a holiday dish. Here are a few dishes that I think pairs well with these fingerling potatoes.

    Do I need to remove the skin?

    Nope! The skin is very thin and edible, so no need to peel the fingerling potatoes before air frying.

    Do I need to soak the fingerling potatoes before air frying?

    Nope! No need to soak the potatoes first. Soaking is usually recommended to remove excess starch for a crispier texture but these potatoes are low in starch. I just make sure to wash them before air frying.
