    Bento Box Lunch: Wild Rice Salad with Fruit

    There are some days where I will have nothing prepped and I’m stuck choosing between spending time making food or taking a shower and walking the dog. This of course happened to me the other day but luckily for me, I had everything I needed in my pantry to make this super easy fruit bento box lunch.

    This Bento Box Lunch: Wild Rice Salad with Fruit takes a couple minutes and two pots that can be left along while you hop into the shower. In your first pot, cook your wild rice on the stove top and in your second pot, cook your greens! It really is as simple as that! Then pack some fruit and/or a snack and you’re good to go for your lunch! I love having a little fruit bento box as it is so easy pack and it’s a healthier choice. If you re-pack your fruit bento a few days beforehand, make sure it’s sealed properly so it doesn’t leak and keep in mind which fruits will oxidize (ie apples turning brown when sliced and left out) and avoid cutting and packing those until the day of.

    In the instructions below, after my wild rice has come to a boil, I hopped into the shower and let everything cook on their own. Easy peasy! Note: the bento box I’m using is from Monbento so there’s a little food cup that I use for my dressing.

    Also, fun fact! The wild rice is technically not rice! Instead, wild rice is an aquatic grass that produces grain, like wheat or barley. The more you know!

    Ingredients

    • 1 cup wild rice
    • 4 cups water or broth
    • 1/2 cup frozen peas
    • 1 cup edamame beans
    • 1 head of broccoli
    • 1/2 cup dried cranberries
    • 1 tbsp honey
    • 3-4 tbsp olive or avocado oil

    Instructions

    • Rinse a cup of wild rice and place your cup of wild rice and 4 cups of liquid of choice into your first pot. Bring it to a boil and then lower the heat to a simmer.
    • In a second pot of water, on low to medium heat, cook your peas and edamame beans (broccoli if you want too or you can consume that raw).
    • After 40 minutes, your rice should be cooked (some of the grains of rice would have burst opened) and you can add in your cranberries and peas. 
    • For the dressing, mix together honey and avocado or olive oil. If you have a side container, you can place your dressing for the wild rice salad on the side or you can mix it together right away. 
    • For a more rounded meal, add in some fruit on the side and your bento box is good to go!

      This is great! I’m always looking for dishes that can be eaten cold to put in my son’s lunch box. He loves rice (even if wild rice isn’t technically rice, haha) so he’ll be really into this.
