Did you know you could cook your beets in a slow cooker? Here’s a fuss-free, hands off, simple way to cook beets in a crockpot!
Slow Cooker Beets
Ok, so you might be wondering why I would cook my beets in a slow cooker when the Instant Pot and the oven are both hands off methods of cooking beets. Well, it’s simple really, I try to run errands whenever H and I are able to go together so on the weekends, if I want beets, I can just pop them into the slow cooker and be back before it’s done cooking!
Leaving the oven on to run errands is a bad idea, especially since we tend to get sidetracked or decide on a second errand when out and the Instant Pot is great but usually my Instant Pot is cooking something as well! So cooking beets in the slow cooker lets me leave the house and free up the other appliances for other components of our meals.

What You’ll Need to Cook Beets in a Slow Cooker
- beets – I used golden and candy cane beets as it was what was at my farmer’s market but you can use whatever beets you have.
- water
How to Cook Beets in a Slow Cooker
- Prepare your beets by giving them a rinse to remove any dirt and cut off the greens/stems of the beets as close to the beet as possible without cutting into it.
- Place the beets inside of your slow cooker along with 2 cups of water.
- Cook on HIGH for 4 hours or LOW for 8 hours.
- When finished, carefully remove the beets (they will be hot!) and let cool a little before removing the skins. You can wear gloves to rub the skin off without staining your hands or by rubbing the skin off with paper towels.
Tips and Notes
- I love using golden beets as they don’t stain like the standard red beets.
- The skins should pretty much just slide off the beets when you give them a squeeze so you shouldn’t be too rough when removing the skins.
How to Pick Beets at the Store
- Make sure your beets are firm.
- Beets should be free from any spots, bruises, or cuts.
- Fresh beets will have bright leafy greens.
How To Store Beets
Beets can last in your fridge for up to 10-12 days. To help them avoid moisture loss, I remove the leafy parts and leave at most 1 inch of the stem attached to the beets.
How to Store Cooked Beets
When stored in an airtight container in the fridge, cooked beets can last for 4-5 days!
How to Freeze Beets
To freeze cooked (and cut) beets, lay them out on a parchment lined sheet pan in a single layer. Cover and freeze for 3 hours or until frozen. Transfer them into an airtight bag or container for up to 8 to 12 months.
Freezing raw beets is not recommended so make sure to cook them first. To thaw, just place them in the fridge overnight.
