I love when fresh corn is in season! Between straight up cooking them on the stove top or grilling them, I’m eating corn almost weekly in the summer! Ever since getting the Instant Pot, I’ve discovered that you could make the juiciest sweet corn on the cob in it.
The best part? It is totally hands off. You just put the corn into the Instant Pot and you can walk away! No more having to babysit a pot in case the water boils over.
You can easily add more ears of corn to this pressure cooker corn on the cob recipe without increasing the amount of liquid.
What You’ll Need To Make This Sweet Corn on the Cob
- water
- heavy cream: aka cream is 35-40% – while milk can curdle in the Instant Pot, heavy cream does not!
- honey
- butter: unsalted
- corn
How To Make Corn on the Cob in the Instant Pot
- In the Instant Pot, add the water, heavy cream, honey, and butter. Stir to combine before adding in the ears of corn. If they do not fit, you can break them in half.
- Place the lid on and set the Instant Pot to manual pressure for 4 minutes.
- Quick release when done, garnish as you desire, and serve.
Recipe Variations/Topping Ideas
- I love to keep it simple by adding some freshly cracked black pepper and butter onto the corn.
- serve with chili-infused mayo and a splash of lime
- serve with mayo, sour cream, and cilantro mixture with lime juice, Parmesan or cotija cheese and chili powder
- serve with a curry mayo
Tips and Notes
How To Pick Corn on the Cob: Look for husks that are green, tight, and not dried out. If there are holes in the husk, that is an indication of potential worms that have snacked on the corn. Skip those.
How To Store Corn on the Cob: Store the ears of fresh corn wrapped tightly in a plastic bag in the fridge for 3-4 days. If you don’t plan on eating your corn within three days, cook it and freeze it.
How To Freeze Cooked Corn on a Cob: After cooking, immediately place the corn in an ice bath, pat it dry, and place it on a parchment-lined sheet pan and freeze in a single layer until frozen. Place into a freezer safe ziploc for up to 3 months.
What’s the Difference Between White and Yellow Corn? Sweetness of the corn is determined by a corn’s genetic type and its growing conditions so there isn’t a difference between buying white or yellow corn.

- 4 ears corn, or more
