Instant Pot Thai Carrot Sweet Potato Soup
Are you a soup or salad person? Or are you like Joey and will kick yourself if you didn’t pick both? (The One Where They’re Up All Night on Friends for those who are confused about who Joey is) I feel like I’m more of a soup person than a salad person. Especially when that soup is this delicious Thai carrot sweet potato soup. I love the sweetness of carrots and sweet potatoes and the hit of heat from the green curry paste just rounds out the soup perfectly.
For this Thai carrot sweet potato soup, I use my Instant Pot – it helps keep the temperature of the kitchen down (plus getting to avoid stirring a hot pot and getting shot steam all up in my face) and it is just so darn easy. All you do is put everything into the pot, add liquid, and then pressure cook. Blend afterwards and boom – done! Seriously – if you haven’t gotten an Instant Pot yet, I totally recommend one.
What You’ll Need To Make this Thai Sweet Potato Soup
Ingredients
- onion
- garlic
- sweet potatoes
- carrots
- salt
- green curry paste
- chicken stock/broth
- coconut milk
Equipment:
- an Instant Pot (mine is a 6qt)
- a handheld blender (or a regular blender)
How To Make This Thai Carrot Sweet Potato Soup in the Instant Pot
In the Instant Pot, layer in the onions, garlic, sweet potatoes, carrots, salt, green curry paste, and chicken stock. Close the lid and set the Instant Pot to Sealing and set the IP to pressure cook for 12 minutes.
With an immersion blender, puree the soup to your desired consistently (or transfer to a blender to blend).
Stir in the coconut milk and blend it together.
Serve warm or chilled.
Tips and Notes for Making This Easy Instant Pot Soup
- Always running out of garnishes? I love topping off my soup with Gourmet Garden Lightly Dried Basil. It is simply a large bunch of fresh basil, that has been lightly dried to last for 4 weeks once opened. Since I’ve killed 4 basil plants, I’ve been loving keeping a stash of this in my fridge for topping off my soup. It’s not as vibrant green but it does the job.
- I personally prefer green curry paste for this recipe but if you prefer red curry paste, go for it!
- Want more heat? Add more curry paste!
- If you don’t want to use chicken stock, vegetable stock works as well
- To speed up the time it takes for the Instant Pot to come up to pressure, you can use hot liquid (I use boiled water to make my chicken stock with Better Than Bouillon).
How To Meal Prep Thai Sweet Potato Soup
- store your soup in an airtight container or mason jar for up to 4 days.
- this sweet potato soup is great for the holidays as well as you have make a large batch a few days beforehand and store it in your fridge so it’s ready to go chilled or reheated
How To Freeze Sweet Potato Soup
- while non-dairy milks like the coconut milk used in this Instant Pot sweet potato soup freezes better than regular milk/cream based soups, I would recommend freezing the soup without adding the coconut milk in and adding it in after you’ve defrosted it!
- I would store for up to 3 months.

I love this quick & easy soup! I’ve made it with both the green and red curry paste, but prefer the red, which I use more of than the recipe calls for. I also add a bit of ginger & cayenne for a little more heat.
