Lemon Basil Vinaigrette

According to Wikipedia, a vinaigrette is “made by mixing an oil with something acidic such as vinegar or lemon juice. The mixture can be enhanced with salt, herbs and/or spices. It is used most commonly as a salad dressing, but can also be used as a marinade.” 

This Lemon Basil Vinaigrette is super easy to make and it perfect for if you have a basil plant that is on overdrive and you have 101 basil leaves hanging around. Plus, this homemade vinaigrette is easy enough to make at home that if you’re looking to skip the bottled dressings (because let’s be honest, how many 70% full expired bottles do we own?), most of these ingredients should already be in your pantry! So save some money and skipped the pre-made bottles with this homemade lemon basil vinaigrette.

What You’ll Need To Make Homemade Lemon Basil Vinaigrette 

  • lemon juice
  • olive oil
  • garlic
  • dry mustard
  • honey 
  • basil leaves

Note: a vinaigrette needs an emulsifier in order for the acid (lemon juice) and oil (olive oil) to blend together, for this recipe, I am using dry mustard powder. Alternatively, you can use regular dijon mustard if you don’t have dry mustard on hand.

How To Make and Store Homemade Vinaigrette

  • Put all your ingredients into a mason jar, put the lid on, and shake shake shake!
  • Store in an airtight container in the fridge for up to a week. Use a weck jar or mason jar to keep out moisture.

Delicious ways to use this Homemade Lemon Basil Vinaigrette 

  • salad (recommended 2 tbsp of dressing per 2 cups of greens)
  • coat chickpeas then roast them in the vinaigrette
  • flavour plain chicken meal preps
  • pair it with some grilled corn
  • toss with a cold pasta (come back tomorrow for the salad that I paired this with!)

Ingredients

  • 1/2 cup lemon juice
  • 1/2 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp dry mustard
  • 1/2 tsp honey, or more
  • 10 basil leaves, cut into small pieces

Instructions

  • Put all your ingredients into a mason jar, put the lid on, and shake shake shake!
  • Store in an airtight container in the fridge for up to a week.
