Make This Roasted Garlic Dressing at Home
Are you like me and will have an expired bottle of salad dressing sitting in the fridge for an extended period of time? More than once I’ve bought some dressing for a party or something, use less than 1/4 of the bottle then just have it hanging out in my fridge until I do a fridge cleaning haha.
After one too many bottles that have been tossed out, I started making my own dressing. It decreases the amount of waste and I get to know exactly what it is that goes into my dressing. Making homemade dressing at home also means I can control the flavour profile as well. You know that meme where the recipe says 1 garlic clove but the cartoon girl adds way more? That’s me. Enjoy this yummy roasted garlic dressing made with 3 heads of garlic!

Ingredients To Make This Homemade Creamy Roasted Garlic Dressing
- garlic
- white wine vinegar
- honey
- dijon mustard
- salt and pepper
- water
- olive oil
How To Make Roasted Garlic Dressing at Home
- Heat oven to 400F
- Cut off the tops of the garlic bulb, drizzle olive oil on top, and wrap it up in tin foil. Roast in the oven for 40-60 minutes.
- In a blender (I used my Vitamix or my food processor), blend together the the cloves of garlic and the rest of the ingredients.
- Store in an airtight container in the fridge for up to a week. Use a weck jar or mason jar to keep out moisture.
Tips on Roasting Garlic At Home
- Be sure to peel away almost all of the loose, papery, outer layers of the head of garlic. Leave the head of the garlic intact with all the cloves still connected.
- Cut off the top of the head of garlic to so the tops of the garlic cloves are exposed.
- The easiest way to remove the roasted garlic is once it’s cooled, press on the bottom of a clove to push it out of its paper. Or if in a rush, use the back of a knife and squeeze out the entire head at once.
- Roasted garlic can also be kept in the fridge for up to 2 weeks or frozen for up to 3 months.
What to Use This Creamy Roasted Garlic Dressing On
- salad (recommended 2 tbsp of dressing per 2 cups of greens)
- toss with roasted chickpeas
- pair it with pizza
- flavour plain chicken meal preps
- toss with a cold pasta

Homemade Creamy Roasted Garlic Dressing
Ingredients
- 3 heads garlic
- 1/4 cup white wine vinegar
- 2 tsp honey
- 1 tsp dijon mustard
- 1 pinch salt and pepper
- 3 tbsp water
- 1/3 cup olive oil
Instructions
- Heat oven to 400F
- Cut off the tops of the garlic bulb, drizzle a bit of olive oil on top, and wrap it up in tin foil. Roast in the oven for 40-60 minutes.
- In a blender or food processor, blend together the the cloves of garlic and the rest of the ingredients.
Notes
- You can also roast garlic in an air fryer if you do not want to turn on the oven just for this dressing!

Yes, I know that meme well — and it represents my cooking style too. Nice to know I’ve got company. This roasted garlic dressing sounds positively delectable. Roasting garlic gives is such a nice mellow-sweet flavor, I can just imagine how good it must smell in the house while it’s cooking. I can think of a dozen different salads, sides and main courses that this dressing would be delicious with. How long do you think this will last if stored in the refrigerator?

YES! I used to do the same thing – sooo many dead bottles of dressing bought for just one use. I also have the same philosophy when it comes to garlic! My husband and I know we wouldn’t be married if we didn’t share the same garlic love. Ha. This dressing has the quantity of garlic dead on – by the head! Soo delicious!

Ohhhh my goddd Carmy, you’ve seriously solved TWO problems for me here. One being that I haven’t been able to indulge in Caesar salads for months now because I’m pregnant and not supposed to risk anything made up of raw eggs. But this garlicky goodness sounds like the perfect substitute! And second, I love garlic dipping sauce for my pizza crust, but since moving to NC, I’ve found that the pizza places around here just don’t have any good ones. They’re almost slimy and runny and lack the creaminess that I want. THIS IS PERFECT!

I am embarrassed to admit that I’ve had dressing in the fridge that is several years old and yes we end up throwing it away. We’ve started making our own dressing and it is so much better! We are always looking for yummy dressings to make at home — the roasted garlic sounds divine. There is nothing better than roasted garlic unless it is browned butter or bacon. YUM! Apologies for not being clear! You drizzle a bit of the olive oil to roast the garlic (around 1-2 tbsp) and save the rest to blend the dressing with!

This dressing looks so simple to make but is packed with so much flavor. I can see it being wonderful to dress salads with, but I would also not say no to drizzling a bit over roasted or grilled veggies this summer. The honey in this would really compliment carrots.

Roasting garlic takes plain garlic, which I really like, and takes it to a superior level. I’ve been in your situation too. Rows of salad dressing that have only a smidgeon used out of them. Homemade is best and we’ve never wasted the dressing when it was from scratch. This salad dressing is exactly the type we really enjoy.

OMG! Fantastic recipe! I LOVE roasted garlic, but had not found a good dressing using it yet. I had to substitute white balsamic vinegar for white wine vinegar as I was out, but it was still amazeballs! I drizzled it over a roasted beet salad with goat cheese and I was in heaven!!!
