Looking for some delicious ways to eat veggie pakoras? Check out these three bowl ideas!

When I worked at Dominos, my coworkers had invited me to their homes for dinner and that’s when I learned what pakoras were and decided that I freaking love pakoras. Ever since my lovely coworkers shared their food with me, I’m always on the look out for a way to get my hands on them. When Spice It Up Foods reached out to me to let me know that they were carrying veggie pakoras at a Costco near me, you bet that they had my attention! Bonus: they’re vegan, made from all natural ingredients, and takes 15 minutes in the oven to cook. Needless to say, I made H drive me to Costco on his day off so I could get my hands on them.
When I got my hands on the veggie pakoras, I insisted on “testing” them out right away. I popped them in the toaster oven and practically burned my mouth trying to eat them ASAP. I know, I have the patience of a puppy. BUT if you could smell what I smelled, you’d do the same! The second I opened the bag, I could smell the spices and just could not wait to eat them. Needless to say, I totally recommend these veggie pakoras to not just be a part of your meal but as a regular snack. I’m more than happy to pop a couple in the oven when hungry and just eat them as it is!
While I eat the veggie pakoras on their own, I also added them to some bowls to keep things interesting for lunch. Down below you’ll find three, yes three, different bowls that you can make featuring Spice It Up’s veggie pakoras!
One Bag of Veggie Pakoras, Three Bowls
Pakora Bowl with Mixed Greens
Ingredients
- 5 pakoras
- 1 russet potato
- 2 tbsp sriracha lime seasoning
- 2 tbsp oil
- 2 cups mixed greens
- 1/2 cup tomato sauce
Instructions
- Heat oven to 400F
- Slice your russet potato thinly and coat with oil and sriracha lime seasoning (or seasoning of your choice).
- Place your pakoras and potatoes in the oven and let it bake for 15 minutes, flipping them over at the half way mark.
- Serve with a side of greens and tomato sauce (or ketchup)
Pakora Bowl with Hummus, Roasted Chickpeas, Kale, and Rice
Ingredients
- 1/2 cup rice
- 1 can chickpeas
- 2 tbsp oil
- 1 tbsp salt, pepper, sriracha lime seasoning
- pakoras
Hummus
- 1 can chickpeas, hold onto liquid
- 3 cloves garlic
- 1 tsp paprika
- salt and pepper
- 1 tbsp oil
Kale
- 1 cup kale
- 5 tbsp lemon juice
- 2 cloves garlic, minced
- 1/2 cup oil
Instructions
- Heat oven to 400F.
- Cook your rice according to the instructions on the bag.
- Coat your chickpeas with the oil and then sprinkle the seasoning onto the chickpeas.
- Place the chickpeas into the oven and after 5 minutes, stir the chickpea a bit and add in the pakoras. Bake for 15 minutes then flip the pakoras and stir the chickpeas half way through.
Hummus
- In a food processor, place in everything and add the chickpea liquid as needed.
Kale
- In a cup, mix your oil, garlic, and lemon juice before pouring it onto your kale.
- Massage your kale until the kale is reduced by around half the size. It'll be darker, softer, and shiny. The process of massaging the kale breaks down it's outer cell structure making it softer and less bitter.
Pakora Bowl
- Assemble the bowl by putting everything together into a bowl with the kale and rice as the base.
Pakora Bowl with Gnocchi, Peas, Guac, and Kale
Ingredients
Kale
- 1 cup kale
- 5 tbsp lemon juice
- 2 cloves garlic, minced
- 1/2 cup oil
Pakora Bowl
- pakora
- 1 cup gnocchi
- 1 cup peas
- 1/2 cup guacamole
Instructions
- Heat oven 400F
Kale
- In a cup, mix your oil, garlic, and lemon juice before pouring it onto your kale.
- Massage your kale until the kale is reduced by around half the size. It'll be darker, softer, and shiny. The process of massaging the kale breaks down it's outer cell structure making it softer and less bitter.
Pakora Bowl
- In the oven, bake your pakoras for 15 minutes, flipping them over at the halfway point.
- While your pakoras are baking, cook your gnocchi according to the packaging.
- To assemble your pakora bowl, place together your gnocchi, peas, guacamole, kale, and pakora!
