    Roasted Nuts Trail Mix with California Prunes

    I love an easy grab and go snack, especially one that’s good for me. Lately, I’ve really enjoyed snacking on trail mix and thought why not make my own? Today’s trail mix is adapted from California Prune’s recipe. California Prunes are so versatile, you can use them to cook and bake with, or enjoy them straight out of the bag. I like cutting them up into smaller pieces to put in a recipe but I’ve grabbed a couple straight from the bag to enjoy before. It is a great item to have in your pantry – plus they last for quite some time in the pantry as they’re shelf stable and are a budget friendly product!

    Why You’ll Love this Trail Mix and California Prunes

    • They’re good for you: did you know that California Prunes are very high in vitamin K, potassium, and polyphenols, making them great for bone health? They’re also a great source of fibre! It can be easy to just grab a chocolate bar when craving something sweet at home but having this trail mix prepared, you can have a delicious but good for you snack.
    • They make for a healthy snack for all ages: this trail mix is so good and with the addition of California Prunes, it makes for the perfect healthy snack. California Prunes contain many important vitamins, minerals, antioxidants and fibre to boost your overall immune system that you’ll want at any age. Make a batch and so you can have it on hand for the week as an easy grab and go snack or have it in your pantry for those work from home snack cravings.
    • It’s easy: this is such an easy trail mix to put together. If you want, you can even skip roasting the nuts and mix them in with the prunes as is!

    What You’ll Need to Make this California Prune Trail Mix

    • mixed nuts: I used a mix of raw almonds, raw cashews, pumpkin seeds, and sunflower seeds.
    • unsalted butter
    • rosemary
    • salt
    • pepper
    • maple syrup
    • brown sugar
    • California prunes – for the best quality prunes, make sure they are California prunes!
    • dried apricot
    • toasted oat ring cereal

    How to Make Trail Mix

    How to Roast Nuts

    • Heat oven to 350F and line a sheet pan with parchment paper. Set aside.
    • Mix together your nuts of choice in a large heat safe bowl and set aside.
    • On the stove top on medium heat, melt the butter and stir in the rosemary for 1-2 minutes.
    • Add the salt, pepper, maple syrup, and brown sugar into the mixed nuts and then pour in the rosemary butter mix. Stir to combine.
    • Spread the mixed nuts onto the sheet pan in a single layer and roast for 15-20 minutes, making sure to stir at the half way mark.
    • Let cool for 10 minutes when done.

    Make the Trail Mix

    • In a bowl, combine the roasted mixed nuts, chopped California Prunes, chopped apricot, and toasted oat ring cereal.
    • Portion out into airtight containers and store in your pantry.

    Storage Tips

    • Meal Prep: I store my trail mix in weck jars and stasher bags so I can grab and go with them. Be sure you store them in an airtight container and a cool dry place. This roasted nut with prunes trail mix should last up to a week if stored correctly but you’ll probably finish it before then!

    More Tips

    • Make sure you are letting your mixed nuts are cooled before mixing them with the prunes, apricot, and cereal. Nuts will be pipping out hot straight out of the oven.
    • You can add in the California Prunes chopped or whole. It’s up to you!
    • Make sure you use raw nuts as you are roasting them.
    • You can tweak how much of each nuts you’d like in your trail mix. I did just under a half cup of raw almonds and raw cashews and filled in the rest with the pumpkin seeds and sunflower seeds.

    • 2 cups mixed nuts , mix of raw almonds, raw cashews, pumpkin seeds, and sunflower seeds.
    • 2 tbsp unsalted butter
    • 1 sprig rosemary, finely chopped
    • 2 tsp salt
    • 1 tsp ground pepper
    • 2 tbsp maple syrup
    • 2 tbsp brown sugar
    • 1 cup California prunes, roughly chopped
    • ½ cup dried apricot, roughly chopped
    • ½ cup toasted oat ring cereal
