- It’s one of my favorite work-from-home mid-day snack, but you can easily pack this up to work!
Ingredients You’ll Need
- canned tuna — I recommend using good-quality canned tuna. As the ingredients list is short, each ingredient will stand out and you want it to taste amazing. I prefer chunk tuna to flaked tuna as it’s easier to drain. You want to remove as much liquid as possible so the mixture is not watery.
- cucumbers — I use a mini seedless cucumber. I prefer seedless cucumbers as their skins are thin (no need to peel!) and there’s no need to scrape the middle.
- carrots — I peel and finely dice up a carrot.
- avocado — make sure it’s nice and ripe. Check by giving the avocado a squeeze and if there’s give to it, it should be ripe. If your avocado isn’t ripe (they ripened when they feel like it, I know), feel free to just skip it.
- mayonnaise — this recipe doesn’t use a ton of mayonnaise, so I use full-fat mayo.
- sriracha — just a bit for some flavor. You can add more! The amount added doesn’t really make the dish taste spicy.
- green onions — I love the freshness you get some green onions. This recipe uses both the white and green parts.
- sesame seeds — for a little added crunch. If you’re a fan of sesame flavors, you can add a splash of toasted sesame oil to the tuna.
- salt — just a bit to balance out the flavors.
- seaweed snacks — I get normal roasted seaweed snacks, but you can get them in different flavors such as green tea or wasabi.
How to Make Tuna Seaweed Snack Bites
- To a bowl, add canned tuna, diced cucumber, diced carrot, diced avocado, mayonnaise, sriracha, green onions, sesame seeds, and salt.
- Mix to combine.
- If serving immediately to share, you can set out the seaweed sheets on a serving board and place a tablespoon of the tuna mixture per sheet. You can also simply assemble one bite at a time.
Recipe Tips and Notes
- This recipe makes approximately 20 tablespoons worth of tuna mixture. Each pack of my seaweed is 10 sheets, so I require only 2 packs. Your package might be different, so double-check before packing it to work!
- Make sure to drain your tuna well. Doing so will prevent the tuna mixture from becoming soggy.
- You can serve these bites with additional sriracha on top.
Make Ahead Tips
- Meal prep: you can make this and store it in an airtight container for up to 2 days in the fridge. The longer it sits in the fridge, the more the avocados will brown. So try to enjoy this as quickly as possible. Also, make sure to keep the seaweed sheets in their original packaging so they don’t go stale.
