Simple Avocado Bacon Corn Chicken Salad
I’m all about lazy salads with avocados. This salad is one of my favourite “lazy” ones as most of these ingredients are stuff I have in my fridge/freezer on a regular basis. It’s a fun and delicious way to jazz up leftover chicken. It works great as a side dish or just a main meal if you’d like!
My favourite parts about this salad is the crispy bacon and corn because it adds a nice crisp crunch to the salad. While you can grill the corn for this recipe, I love roasting it in the oven. While fresh corn on the cob may not be available, I’ll be sharing how I do this with frozen corn as there’s always a bag in the freezer!
What You’ll Need To Make This
- leftover shredded chicken
- cooked bacon: you can cook it at the same time as roasting the frozen corn as they both require a 400F temp. For the bacon, pull it out after 15-18 minutes.
- frozen corn
- butter
- sweet or smoked paprika
- avocado
- olive oil
- lime juice
- salt
How To Make Crispy Corn Kernels from Frozen Corn
- On a sheet pan, spread out the frozen corn kernels in a single layer, sprinkle on the paprika, and place the divided up butter evenly across the corn.
- Roast in a 400F oven for 20-30 minutes or until it has crisped up, making sure to stir it every 5-10 minutes.
How To Put Together this Easy Avocado Bacon Corn Chicken Salad
- In a large bowl, combine the shredded chicken, bacon, corn, and avocado.
- Combine olive oil, lime juice, and salt before drizzling it onto the salad. Toss to combine.
- Serve immediately.

- add in red onions
- add in grape tomatoes
- add in fresh herbs
- grill the corn instead
- add a bed of greens to this such as arugula or spinach
Tips and Notes
- Sometimes, to make the corn even crispier, after the bacon has finished up in the oven, I pour the bacon fat into the roasting corn! Bonus flavour!

- On a sheet pan, evenly space out the bacon in a single layer and bake for 15-18 minutes, until crispy.
Putting it All Together
- In a large bowl, combine the shredded chicken, bacon, corn, and avocado.
- Combine olive oil, lime juice, and salt before drizzling it onto the salad. Toss to combine.
- Serve immediately.
