This Bacon, Mushroom, Spinach Pasta makes dinner time super easy! Delicious, filling, and full of flavour, it takes less than 30 minutes to make!
Bacon Mushroom Spinach Pasta
When it comes to weeknight dinners, I just want something quick and easy! But you probably around know that from my other recipes here. The faster, the better. So whenever I don’t have dinner planned ahead of time, make this super quick (like 15 minutes quick) bacon mushroom spinach pasta. I almost always have all the ingredients on hand and if my bacon is frozen, I just swing by the store on my way home and pick up a pack.
This recipe is similar to pasta carbonara except I do not add eggs to the dish. Pasta carbonara doesn’t reheat well and I wanted to make something that can be reheated/be meal prepped ahead of time because I prefer to not have to cook every single night. On busy nights when we don’t make it home before 9pm, this 15 minute pasta is a lifesaver.
What You’ll Need To Make This Easy Pasta Dinner
- bacon
- shallots: onions can be subbed in if you’d prefer
- garlic
- mushrooms: sliced cremini
- pasta water
- pasta: I used fettuccine
- peas: both frozen or fresh is fine
- spinach: use baby spinach or chop up the larger variety
- heavy cream
- parmesan
How To Make Bacon Mushroom Spinach Pasta
Bring a pot of water to a boil and add in your pasta when ready. Cooking until al dente (see your pasta container for instructions).
While the water is boiling, in a medium sized pan, fry your bacon until crispy.
Once done, set it aside, keeping the bacon fat in the pat, and sauté your shallots and garlic until softened.
Next, add in the mushrooms, continuing to sauté.
By this time, your pasta should be done. Add a little bit of pasta water to the pan to deglaze if needed. If not, add your pasta into the pan, alongside the peas. Then stir in the spinach.
Pour in the reserved pasta water, heavy cream, and parmesan. Stir to combine and to coat the pasta with the sauce.
Top it off with the crispy bacon and serve.
Tips On Making This Pasta Dinner at Home
- I use this pot from Zwilling to easily drain my pasta with and it automatically reserves some pasta water for me so that I won’t accidentally pour it down the drain!
- I don’t add extra salt to this dish as I find the bacon to add enough salt to the recipe. Your mileage may vary.
Substitutions and Variations
- Bacon can be subbed out for pancetta
- Add some shredded chicken to the pasta for extra protein
- Pasta can be switched for any pasta of your choice
- Shallots can be swapped for onions
- Heavy cream can be switched for half and half if you’d like to cut down on the cream but I much prefer heavy cream for this recipe. Plus, it’s only 1/4 cup!
Storing Leftovers and Reheating the Pasta
Store in an airtight container inside the fridge.
To reheat, gently heat it back up on the stovetop or microwave it until warm.
