    This Simple Lentil Salad with Mixed Greens has been one of my go-to easy salad lunches. Packed super well for meal preps as well!



     

    Easy Lentil Salad

    I’m kinda obsessed with this lentil salad. It has beets, cherry tomatoes, red onions, lentils, and mixed greens – some of my favourite things! It’s so easy to make and was originally inspired by a fridge clean out where I was trying to figure out what to make with all my leftovers.

    So this salad is definitely super versatile if you’ve got a handful of leftovers vegetables hanging out in your fridge that needs to be used up! So think of this recipe as more of a framework for yourself than a “must follow to the tee” recipe!

    This recipe is great for meal preps, potlucks, dinners, and more. It’s super simple and delicious!

    What You’ll Need

    • mixed greens – or salad greens of your choice.
    • green lentils – here’s how I cook my green lentils in my Instant Pot.
    • red onions
    • beets – I use golden beets, here’s how I cook mine in the oven & Instant Pot
    • cherry tomatoes
    • salad dressing of your choice – I like my lemon basil vinaigrette
    • optional garnish: green onions

    How to Make This Lentil Salad

    • In a large bowl, combine your ingredients and easy immediately or let chill in the fridge until ready to serve.
    • If meal prepping in a jar: Layer in a 1L mason jar in the following order – dressing, red onions, green lentils, beets, cherry tomatoes, mixed greens.

    Recipe Variations

    • more ideas of what can be added are carrots, edamame, chickpeas, shredded chicken, tofu, and more.
    • you can also top with nuts and seeds for an extra crunch.

    Ingredients

    • 3-4 cups mixed greens
    • 2 cups cooked green lentils
    • ½ red onions, diced finely
    • 1 cooked beet, diced
    • 1 pint cherry tomatoes, halved
    • ⅓ cup salad dressing of your choice, try my Lemon Basil Vinaigrette

    Instructions

    • In a large bowl, combine your ingredients and easy immediately or let chill in the fridge until ready to serve.
    • Mason Jar Meal Prep: Layer in a 1L mason jar in the following order – dressing, red onions, green lentils, beets, cherry tomatoes, mixed greens.

    Notes
