This easy Thai Bubble Tea is a homemade version of the popular boba drink that’s so full of flavour and tasty! It’s a mix of Thai tea and brown sugar bubble tea that only takes a handful of ingredients to make.
There is no such thing as too much boba in one’s life. I could literally drink bubble tea all day everyday and recently I decided to make this Thai version at home. Since moving, the boba shops around me haven’t really made an impact. We tried one recently where I ordered a Brown Sugar Thai Tea and it was the first time I’ve never finished a bubble tea. So here I am, making my own once my thai tea came in the mail and I’m here to share with you how you can my your own too!

Ingredients You’ll Need
- tapioca pearls — I use these specific ones for extra sweetness for this hojicha boba. You can use any topioca pearls you like.
- muscovado sugar — or dark brown sugar. Muscovado sugar is a little less refined than regular brown sugar so it has more pronounced caramel and toffee notes to it.
- Thai tea
- half and half — or non dairy alternative, sweetened condensed milk, coconut milk.
- water
How to Make Brown Sugar Thai Boba
Brown Sugar Boba Pearl Syrup
- Prepare your tapioca pearls according to the package.
- In a pot, combine the muscovado sugar with 40 ml of water and bring it to a boil. Turn down the heat to a simmer and add in the prepared tapioca pearls. Simmer until the brown sugar syrup has thickened. Simmering the cooked tapioca pearls in the syrup just adds more flavour to them.
- Remove from heat once it has thickened.
Thai Bubble Tea
- Bring water to boil and add the Thai tea mix.
- Allow the Thai tea to steep for at least 30 minutes and cool to room temperature. Or chill in the fridge until ready for use.
- In a cup, add in half of the brown sugar syrup with the pearls.
- Top with half of the tea and half of the dairy.
- Stir to combine and enjoy!
Tips and Notes
- I like to put my in a tea in a tea diffuser so I don’t have to strain my pot of tea.
- Please feel free to adjust the amount of tapioca pearls and brown sugar syrup to your liking. I prefer my boba tea to be on the sweeter side and I love chewing on QQ pearls so I’m all for it! I usually add extra to mine and H adds less to his. My glass of bubble tea is usually much bigger than the glass pictured here haha.
- Feel free to double or even triple this recipe.
- Be sure to get some boba straws as your pearls won’t fit through regular straws!
FAQs
If you want, you can definitely make your own pearls. For a while, I made my own but it was so time consuming rolling every single tapioca pearl by hand that I just purchase the shelf stable ones instead. This is the one I buy.
The boba balls are best consumed immediately so I would not recommend making the tapioca balls in advance. However, the tea you can make a day in advance and let it chill in the fridge until ready for use.
You can definitely add ice to your Thai bubble tea! I usually skip the ice since I don’t like how it dilutes the drink if I don’t finish it fast enough.
They’re the same thing. Boba, boba tea, bubble tea, milk tea, tapioca tea, pearl milk tea. It’s mostly a regional verbiage.
There’s caffeine in Thai tea so there’s some caffeine in this drink.
