Roasted Cajun Chicken Thighs Meal Prep
So I’m usually allll about chicken breasts but there are days where I’m craving that crispy chicken skin. To hit that craving, I turn to the slightly cheaper bone-in skin-on chicken thighs.
This week, I’m sharing this tasty roasted cajun chicken thigh meal prep. I paired this up with some roasted sweet potatoes and some corn (because I’m one of those people who forget already having a bag of corn in the freezer and now am the proud owner of 3 bags). If you want to make the corn even more tasty, you can roast it as well for a sweet toasty flavour.
As I mentioned previously in my How To Roast Sweet Potato Cubes post, while sweet potatoes go well with cinnamon and nutmeg, I prefer a savoury option with salt and garlic powder. I find that savoury sweet potatoes pairs better with more dishes than cinnamon/nutmeg.
What You’ll Need To Make This Baked Cajun Chicken in the Oven
- chicken thighs
- olive oil
- cajun seasoning
- sweet potato cubes
- salt
- garlic powder
- corn
How To Make Homemade Cajun Chicken Seasoning
Don’t have pre-made cajun seasoning on hand, here’s how to make your own at home! Adjust as you like as this is just a suggested guide!
- 2 tsp sweet paprika
- 2.5 tsp garlic powder
- 1.5 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp cayenne pepper
- 1/2 tsp fresh ground pepper

- Mix all ingredients together in a bowl or spice jar until evenly combined.
- Use immediately, or store in a spice jar or mason jar for up to 1 year.
How To Make This Crispy Cajun Chicken Thighs
- Heat the oven to 400F
- Coat the chicken thighs with olive oil and cajun seasoning and place evenly on a sheet pan.
- Coat the sweet potato cubes with olive oil, salt, and garlic powder and place evenly on a separate sheet pan.
- If choosing to roast your corn kernels, coat with olive oil and salt and place on a separate sheet pan as well.
- Roast everything in the oven for 35-45 minutes.
- Give the sweet potatoes and corn kernels a stir and pull it out at the 30 minute mark.
- Once everything is done, let the chicken cool before serving or packing up in meal prep containers.
TIPS ON MAKING THIS Crispy Cajun Chicken Thighs Meal Prep
- I use two sheet pans for the sweet potato and corn to avoid overcrowding. The more space they have between each other, the better they roast!
- Roasting the corn is optional and if you’re trying to save some time with washing dishes, you could skip this step if you wish.
- Store for up to 5 days in the fridge in an airtight container. You can also store the sweet potatoes and chicken separately with a container with a divider.

Cajun Chicken Thighs Meal Prep
Ingredients
- 8 chicken thighs
- 2.5-3.5 tbsp olive oil
- 2-3 tbsp cajun seasoning
- 2 sweet potatoes, cubed
- 1 tsp salt
- 1 tsp garlic powder
- 1 cup corn kernels
Instructions
- Heat the oven to 400F
- Coat the chicken thighs with 1-2 tbsp olive oil and cajun seasoning and place evenly on a sheet pan.
- Coat the sweet potato cubes with 1 tbsp olive oil, salt, and garlic powder and place evenly on a separate sheet pan.
- If choosing to roast your corn kernels, coat with 1/2 tbsp olive oil and a pinch of salt and place on a separate sheet pan as well.
- Roast everything in the oven for 35-45 minutes.
- Give the sweet potatoes and corn kernels a stir and pull it out at the 30 minute mark.
- Once everything is done, let the chicken cool before serving or packing up in meal prep containers.
