This easy Mango Chili Lime Chicken meal prep is coated with a sweet and spicy marinade. Delicious hot or cold.
Mango Chili Lime Chicken
Are y’all ready for a new chicken marinade?! I’ve been craving a yummy tropical-vibe meal and with all the mangoes in season, I decided to toss from mangoes in a blender and see where it took me.
After raiding the fridge to see what I could go with the mangoes, this Mango Chili Lime Chicken came to be. This is perfect paired with a quinoa salad and is great as a cold lunch meal prep!
What You Need For This Mango Chili Lime Chicken
- mango, peeled and cubed (I used a Kent Mango)
- Sriracha
- lime juice
- shallot
- garlic
- honey
- orange juice
- oil/cooking spray
- skinless boneless chicken breasts
How To Make This Mango Chili Lime Chicken
- In a blender, mix everything but your chicken and oil/cooking spray.
- Once the marinade is done blending up, place your chicken in a bag with the marinade. Marinate the chicken for at least 1 hour or overnight.
- When ready, heat your oven to 425F, cover a cooking tray with cooking spray or oil and bake the chicken for 25 minutes. Finish under the broiler for 3-5 minutes.
Tips and Notes on Making This Mango Chili Lime Chicken
- You can sub out chicken breasts for thighs if you’d like but it’ll increase the cook time.
- You can grill this chicken as well!
- When I took the chicken out of the marinade, I spooned some on top of the chicken before baking.
- To make this into a delicious cold meal prep, I paired the chicken with mixed greens, quinoa, and mango cubes.
- To make this taste stronger, I cooked my quinoa with orange juice.
- I store my meal prep in these airtight containers.

Ingredients
- 1 mango, peeled and cubed
- 3 tbsp Sriracha
- 1/2 of a lime, juiced
- 1 shallot
- 4 cloves garlic
- 2 tbsp honey
- 1/4 cup orange juice
- oil/cooking spray
- 4 skinless boneless chicken breasts
Instructions
- In a blender, mix everything but your chicken and oil/cooking spray.
- Once the marinade is done blending up, place your chicken in a bag with the marinade. Marinate the chicken for at least 1 hour or overnight.
