This super simple Sautéed Corn and Shallots is a quick and easy side dish that goes with any meal!
Why You’ll Love This Easy Corn Recipe
- It’s easy! It’s so easy that anyone can make this. You pretty much add everything to the skillet and just stir until it’s done.
- It’s budget friendly. Corn is almost always on sale or is super cheap! Especially when it’s in season.
- You can even use frozen corn. Just make sure you thaw them out first. Use corn frozen from when they’re in season or just regular store-bought frozen corn. If using frozen corn, it’ll just need a tad bit of extra seasoning to add some flavour back to it.
What You’ll Need
- butter — best to use unsalted butter so you can control how salty you want this to be.
- cooked corn
- shallots
- salt
- garlic powder
- thyme
How to Make This Corn Side
- In a skillet over medium heat, add in the butter, corn, shallots, salt, and garlic powder.
- Sauté for 10-15 minutes, adding the rest of the butter at the half way mark, until the corn has changed from a yellow to a golden colour.
- Add the thyme and additional seasoning if desired to the corn and shallots and sauté for another 5 minutes.
Tips and Notes
- For more flavour, you can add some onion powder or paprika to it.
- Add some bacon bits to the corn mixture for a little added crunch.
- Add a pinch of sugar before sautéing the mixture to help it caramelize.
- I usually give my mixture a taste before adding thyme to it. Frozen corn tend to need a bit of additional seasoning.
- I like to use the thyme leaves on their own. Alternatively, you can keep the stem on and sauté with it and then remove it when finished cooking.

Ingredients
- 2 tbsp butter, unsalted
- 2½ cups cooked corn, divided
- 2-3 shallots, sliced
- 1 tsp salt
- 1½ tsp garlic powder
- 5 sprigs thyme, stem removed
