Why You’ll Love This Sheet Pan Chili Lime Fajitas

This easy sheet pan recipe only takes 30 minutes to cook and a handful of minutes to prep – this means if you need a quick last minute meal, this has your back! If you purchase chicken breasts per-sliced, you can cut down even more on prep time!

This sheet pan dinner is also easily doubled or triples with extra sheet pans with not much extra work so if you have a guests coming, and want to cook something up that is easy to clean up and is a hands-off meal so you can spend more time chilling than cooking, this chili lime fajitas is perfect for that. Serve with some tortillas and a mini buffet line of toppings and everyone customize their own plate!

What You’ll Need To Make This

  • chicken breasts: you can also swap with chicken thighs
  • bell peppers
  • small red onion
  • shallots: they are a bit sweeter than regular onions. If you don’t have any on hand, it can be skipped, I just like using shallots :)
  • cherry tomatoes
  • olive oil
  • lime: we are using the lime juice for the baking and after it’s cooked
  • chili pepper
  • garlic powder
  • onion powder
  • sweet paprika
  • salt

How To Make This Sheet Pan Dinner

  • Heat oven to 450F.
  • In a large sheet pan, add the chicken breasts, bell pepper, red onion, shallots, and cherry tomatoes. Drizzle on the lime juice, olive oil, and seasoning. Using your hands, mix everything together until everything has been coated evenly. Add more olive oil as needed.

  • Bake for 30 minutes or until the chicken has cooked through and the vegetables have crisped up. Stir halfway through if desired.
  • Squeeze a lime on top of the fajitas before serving.

Recipe Variations

  • swap chicken breasts for chicken thighs – you may need to adjust cooking time by a few more minutes.
  • make this into a salad by serving with a bed of fresh greens such as spinach

Tips and Notes

  • make sure everything is cut in a similar size so they cook evenly.
  • serve with warm flour or corn tortillas, guacamole, salsa, sour cream, pineapple salsa, pico de gallo, greek yogurt, and/or cheese

  • 4 chicken breasts, sliced
  • 3 bell peppers, seeds removed, sliced
  • 1 small red onion, quartered
  • 3 shallots, halved
  • 225 grams cherry tomatoes
  • 3 tbsp olive oil
  • 3 lime, PLUS 1 for before serving
  • 1.5 tbsp chili pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tbsp sweet paprika
  • 1 tsp salt
