What You’ll Need To Make This
- chicken breasts: you can also swap with chicken thighs
- bell peppers
- small red onion
- shallots: they are a bit sweeter than regular onions. If you don’t have any on hand, it can be skipped, I just like using shallots :)
- cherry tomatoes
- olive oil
- lime: we are using the lime juice for the baking and after it’s cooked
- chili pepper
- garlic powder
- onion powder
- sweet paprika
- salt
How To Make This Sheet Pan Dinner
- Heat oven to 450F.
- In a large sheet pan, add the chicken breasts, bell pepper, red onion, shallots, and cherry tomatoes. Drizzle on the lime juice, olive oil, and seasoning. Using your hands, mix everything together until everything has been coated evenly. Add more olive oil as needed.
- Bake for 30 minutes or until the chicken has cooked through and the vegetables have crisped up. Stir halfway through if desired.
- Squeeze a lime on top of the fajitas before serving.

- 1 tsp salt
